I prefer limiting my use of palm oil (and especially after listening to this brilliant podcast by The Vegan Option, I’m absolutely certain that it’s the only solution), but faced an impossible conundrum when looking for vegan margarine. Palm oil is an ingredient in all of them. So, I did some research and found Vegan Baking and their recipe for rich, creamy and satisfying butter. I tried it and it’s super easy, absolutely delicious and melts like a dream. Even skeptical Mr. GoodEating loved it. What’s not to love? I will be making this in big batches; one batch with a bit more salt and the other without and freezing them. Here’s the result. Update: if you found some of the measurements in the recipe a bit cumbersome, use the following instead (I measured them out): 90g yogurt; 142g coconut oil; 27g oil

It’s delicious. I have to restrain myself. And not hard or time consuming. The hardest bit was ordering the lecithin from Amazon. HA!
