Posted @withregram • @brave_newgirl Doing things scared, doing them messy, is a way to jump into something that you have no idea will work, but you believe, somehow is the right thing to do.

That’s how so many entrepreneurs start out. We see a problem and we work out a way to fix it. But we don’t necessarily have everything we need in place to get started.

Neverthless we dive in and iterate as we go. We make mistakes and we learn and we evolve.

When it comes to climate solutions it is no different. We’ve not saved a planet before so we are jumping in with what we have and running with that.

What you do may be different from what I do, but we can influence and inspire one another.

My Brave New Girl podcast guest this week is Emilia Leese Ⓥ🌱 , and when she heard about the power of planting trees to help regenerate biodiversity and absorb carbon from the atmosphere, she and her husband decided that was how they were going to do their bit.

They bought 100 acres of land south of Loch Ness in Scotland and began on the bold and brave adventure with The Birchfield Project, dedicated to rewilding & restoring the native forest, peat bog & funga.

They bring life back to the land by reintroducing locally extinct species & inspiring people to connect with the environment.

Emilia is also the author of Think like a Vegan, a nuanced read on the powers of being plant-based. She is also blogger @emisgoodeating

Best part of life is the friendships we make and love we share. From meeting at the Himalayan Vegan Festival in Nepal in the autumn last year, to celebrating @alka_naithani with @krishnarajnaithani and @treeyanka in the Highlands 🏴󠁧󠁢󠁳󠁣󠁴󠁿. There were so many laughs, face-hurting levels of laughs. So much food - hello @culturecafedeli vegan cafe in Inverness - gorgeous and delicious birthday cake by @cakesbycarrieanne, and our fave jackfruit coconut curry dinner from @lotusartichoke ‘s Sri Lanka cookbook. And all the vegan talk possible. Here’s to many more memories together 🧡

Today, we treated ourselves to the newest and love

Today, we treated ourselves to the newest and loveliest vegan spot in the Highlands. @culturecafedeli is a gem. It’s bright and gorgeous inside and the food is delicious with lots of homemade and local products, including @left_coast_culture cheeses. And there were @veganbaybaker croissants. Everything is vegan. I’m going back as soon as I can.

London’s newest vegan venue is @witch.wich sandw

London’s newest vegan venue is @witch.wich sandwich shop. And it’s a belter. @kippysnacks and I went there on their first soft opening day and tried
👑 classic corrie- a coronation/curried chicken with balanced flavours, great texture and it hit the spot
🗽the classic Reuben which was pretty great and as a former NYer, I judge these hard. This had lots of Russian dressing, great pickles and sauerkraut, the homemade seitan was on point and the cheese not overwhelming
🐠 🌱 the Vish- crunchy and warm “pseudo aquatic digits” (brilliant) in soft bread with tasty tangy tartar sauce.
And all the lettuce was crunchy and fresh
And as a bonus, we got to try their cat shaped ice cream sandwich with homemade cookie. All well balanced and not too sweet. I liked the crunchiness of the cookie too.
So get yourselves there. Easy to reach and inside the Wood Street Indoor Market, which is also pretty great for some vintage clothing, records and new and used books.
The vibe reminds me of @seitanshelper in NYC, which is another favourite sandwich place

As usual, paid for things ourselves.
